I am FINALLY
back in the swing of things, although not all better by any means! I
did eat my breakfast quiche, but I skipped lunch because I was not
right. I ate dinner, though, and now think I'm ok. Dinner was
prosciutto-wrapped chicken over mashed cauliflower. I must say that,
while I always liked cauliflower, I'm pretty much addicted to it now.
It is so versatile! Anyway, I don't have a pic of the dinner, but the
chicken was so easy if you want to try it. You can use whatever chicken
you have. Pre-Whole30 I would also make these stuffed with Jarlsberg cheese. But, let's not even talk about how wonderful that is...
Prosciutto-Wrapped Chicken with Asparagus
1 lb chicken tenders
1 slice of prosciutto for each tender
salt & pepper
olive oil
broth
asparagus
shallots
Wrap each tender with prosciutto and secure with toothpick. Pan fry in olive oil on med-high heat, turning to make sure all sides are browned. Remove from pan & keep warm. Add shallots (or onions or whatever) and asparagus. Deglaze with broth and sautee until asparagus is crisp-tender. That's it! Again, I served it over the cauliflower mash with asparagus on the side. Really quick, easy, and ridiculously good.
