Day 28: Pecan-Encrusted Chicken

I am really excited to be on day 28!  However, I am also scared to death of day 30.  After that day, the rules will bend and so will I and I fear that I will fall down the slippery slope of sugar and dairy and grains (oh my).  Even though I am the one who decided to follow the rules, it is oddly comforting to have the strict rules in place.

Breakfast: Eggs with asparagus, shallots, and prosciutto.  WOW.  This was amazing.

Lunch: nothing...starting to get sick :(

Dinner: Pecan-encrusted chicken, cauliflower mash with kale chips, and a sweet potato!

This was really easy.  Dip chicken in egg wash, then in chopped pecans.  Place in oven at 375 degrees until cooked through, flipping once.  The flavor of the pecans went well with the sweet potato, just like a pie!

  1. I am sliding down that slope as we speak. I feel like a different person than I was 2 weeks ago, and it's hard to believe. I just spent an hour or so looking through recipes, seeing what I have in the freezer, and making a shopping list. I am going to cook Sunday for the week, the way I did every week during my W30. In my defense (read: as an excuse), the past few weeks have been CRAZY, and last weekend and this weekend I had/will have almost no free time. But I'm going to make sure I throw together a few things. The recipes I chose are either ones I've made before, or something similar and easy. It won't be exciting, but it will get me through.

    1. I kind of feel like you almost have to slide down the slope so that you realize how much you really gained (in terms of health and control) and not just how much you lost (in terms of weight). I have yet to step on the scale b/c of all the damage I did over the past few days. Tomorrow I will start the Whole5. I might do through Friday, though, since the week just works better if I plan every minute of it. It is also weird that two sicknesses have interrupted this...It is the lack of sleep, I guess.
